Baked Porridge

Ingredients

Makes 4 portions

  • 300g rolled oats
  • 500ml milk
  • 400ml water
  • 2 tbsp chia seeds
  • 3-4 tbsp maple syrup (depending on how sweet you like it)
  • 2 eggs, whisked
  • 1 cup of frozen berries (I use blackberries and raspberries)
  • Brown sugar for adding on top.

Method

  1. Pre-heat oven to 180 degrees c.
  2. Add oats, milk, water and salt to a pan and bring to the boil. As soon as it reaches boiling reduce the heat and let it simmer for 5-8 minutes, stirring occasionally. 
  3. Remove from the heat and stir in the chia seeds and maple syrup. Pour the eggs into the mixture but stir quickly to ensure that you don't end up with scrambled eggs. 
  4. scatter the berries into a small oven-proof dish and pour the mixture over the top. Sprinkle with brown sugar, if desired, and bake in the oven for 15 minutes or until the sugar has disolved and started to bubble on top.
  5. Remove from the oven and devour imediately or let it cool and reheat for breakfast throughout the week.

Tip: If you're a chocolate lover (I mean, who isn't!?) add a few dark chocolate chips in with the berries. Heaven.
